Black Beans - cooking recipe

Ingredients
    4 c. beans, washed and soaked overnight
    1 large onion, diced
    3 cloves garlic, diced
    1 carrot, cut into small pieces
    1 stalk celery, cut into small pieces
    2 to 4 jalapeno peppers, diced
    6 chicken bouillon cubes
    2 qt. water
    2 tsp. ground cumin
    salt to taste
    2 c. Monterey Jack cheese
Preparation
    Drain beans and add all ingredients.
    Simmer until tender, about 2 hours.
    Stir in 2 cups Monterey Jack cheese.
    Eat as a main dish, plain or over rice.
    Good served with Chicken Salad Burritos, also.
