Black-Eyed Pea Casserole - cooking recipe

Ingredients
    1 medium onion, diced
    1 Tbsp. margarine
    1 lb. ground beef
    2 cans black-eyed peas
    2 c. cooked rice
    1 can Ro-Tel tomatoes
    1 c. sharp Cheddar cheese
Preparation
    Saute onion in margarine in skillet until soft.
    Stir in ground beef and brown well.
    Drain grease.
    Stir in peas, rice and tomatoes.
    Place in 2-quart casserole and top with Cheddar cheese. Bake at 350\u00b0 for 20 minutes.
