Zucchini Casserole - cooking recipe
Ingredients

6 c. sliced zucchini, about 5 medium cut crosswise into 1/4-inch slices
1/2 c. (1 stick) butter, melted
1 pkg. (8 oz.) herb-seasoned stuffing mix
1 c. shredded raw carrots
1/4 c. chopped onion
1 can (10 3/4 oz.) cream of mushroom soup
1 c. sour cream
Preparation

In saucepan with steamer basket, steam zucchini over boiling water until just tender, 3 to 5 minutes.
Do not overcook. Meanwhile in mixing bowl, combine melted butter and stuffing mix. Spread half of mixture over bottom of 13 x 9-inch pan.
In another bowl, combine zucchini, carrots, onion, soup and sour cream.
Spoon vegetable mixture over stuffing in baking pan.
Cover with remaining stuffing mix.
Bake, uncovered, at 350\u00b0 for 30 minutes.
