Cuban Enchilada Crab - cooking recipe
Ingredients

1/2 c. vegetable oil
2 lb. crab meat
1 medium onion, chopped
1 medium bell pepper, chopped
4 cloves garlic, minced (4 tsp.)
1 (2 oz.) jar pimientos, minced
1/4 c. chopped fresh parsley or cilantro
1/4 c. ketchup
1 tsp. Tabasco sauce or more to taste
1/2 c. dry white wine
1 tsp. vinegar
1 1/2 tsp. salt
1 bay leaf
Preparation

In a deep-sided pot, heat oil over medium heat.
Add crab meat and fry 5 minutes.
Add onion, bell pepper and garlic.
Cook another 5 minutes.
Add pimientos, parsley, ketchup, Tabasco sauce, wine, vinegar, salt and bay leaf.
Reduce heat to low and cook 5 minutes or until sauce is thickened.
Remove bay leaf.
Serves 6.
