Quick Blueberry Coffee Cake - cooking recipe
Ingredients

1/2 c. shortening
1 c. sugar
2 eggs
2 c. flour
1/2 tsp. salt
2 1/4 tsp. baking powder
1 c. milk
1 can blueberry pie filling
Preparation

Cream shortening and sugar until fluffy.
Add eggs, one at a time, beating well after each addition.
Sift flour, salt and baking powder together.
Add to creamed mixture alternately with milk.
Spoon batter into large greased loaf pan.
Pour pie filling over batter.
Bake in a preheated 350\u00b0 oven for about 40 minutes or until cake tests done.
May frost with latticed confectioners frosting, if desired.
