1 medium eggplant
1 c. milk
2 eggs
seasoned bread crumb
peppers (optional)
pepperoni
1 jar spaghetti sauce
2 Tbsp. olive oil
Preparation

Wash eggplant and slice into 1/4-inch slices, leaving skin on. Dip slices into mixture of milk and egg.
Coat with seasoned bread crumbs.
Coat cookie sheet with oil; place slices of eggplant on sheet.
Place tablespoon of sauce on slice.
Option, put peppers and pepperoni on slices.
Place in 425\u00b0 for 30 to 35 minutes.
Last 5 minutes, sprinkle with Mozzarella until cheese melts.
