Stuffed Peppers - cooking recipe

Ingredients
    6 large green peppers
    1 Tbsp. bacon drippings or melted shortening
    1 c. cooked rice
    1 small onion, minced
    1/8 tsp. black pepper
    1 lb. ground beef
    1 can chopped tomatoes
    1/2 tsp. salt
    3 Tbsp. grated sharp cheese
Preparation
    Cut thin slices from stem end of pepper.
    Remove seeds. Parboil in 1 cup boiling water with 1 1/2 teaspoons of salt, about 5 or 6 minutes.
    Drain.
    Brown beef in bacon drippings or shortening.
    Simmer tomatoes, juice and onion until onion is tender, about 5 minutes.
    Stir occasionally.
