Brazilian Chicken And Rice - cooking recipe

Ingredients
    1 chicken, cut up and skinned
    1/4 onion, diced
    2 Tbsp. tomato paste
    enough water to fill 2 inches in pot
    cooked white rice
    1 1/2 Tbsp. oil
    1 clove garlic, minced
    salt to taste
Preparation
    Cook in pot on stove; brown onion and garlic in oil until tender.
    Add chicken; salt each piece.
    Brown slightly.
    Add water; bring to a boil.
    Add tomato paste and salt.
    Lower to medium heat; cover with tipped lid.
    Simmer for 20 to 30 minutes. Stir occasionally.
    Serve over cooked white rice.
    Spoon sauce over rice with chicken.
