Dr. Bird Cake - cooking recipe

Ingredients
    3 c. self-rising flour
    1 tsp. cinnamon
    2 c. sugar
    1 1/2 c. Wesson oil
    1 (8 oz.) can crushed pineapple
    1 1/2 tsp. vanilla
    3 eggs
    2 c. banana, diced
    pecans and coconut (if desired)
Preparation
    Mix self-rising flour, cinnamon and sugar together.
    Dice banana and add to dry ingredients along with oil, vanilla, eggs, pineapple, nuts and coconut.
    Stir but do not beat; pour into a greased pan.
    Bake at 350\u00b0 for 1 hour and 20 minutes.
    This is best baked in a tube pan.
    Before taking cake from pan, let cool. Serves 8.
