Vegetarian Stuffed Eggplant - cooking recipe

Ingredients
    2 medium eggplant
    1 chopped onion
    2 eggs
    1/2 c. milk
    basil
    1/2 lb. grated cheese (Cheddar or Swiss)
    1 c. bread crumbs
Preparation
    Parboil eggplant (about 10 to 15 minutes).
    Scoop out inside and mash.
    Mix remainder of ingredients with eggplant.
    Put back in eggplant shell.
    Cook for 30 minutes at 350\u00b0.
