Potato Salad(No Mayonnaise Or Egg) - cooking recipe

Ingredients
    2 1/2 lb. potatoes
    1 medium sized yellow onion, finely chopped
    1/2 c. canola or olive oil
    1/2 c. white wine vinegar
    2 tsp. (or to taste) salt
    1 1/2 tsp. sugar
    1/4 tsp. freshly ground white or black pepper
    1 1/2 tsp. dry mustard
    1/4 c. chopped flat leaf parsley
Preparation
    Cook potatoes in boiling water for 20 minutes or until tender. Peel (if desired) and cut into 1-inch cubes.
    Potatoes should be just warm enough to handle
