Sweet Potato Cake - cooking recipe
Ingredients

1 1/2 c. sifted flour
2 tsp. baking powder
1/2 c. shortening
2 eggs, well beaten
2 c. hot mashed sweet potatoes
3/4 c. sugar
1/4 tsp. salt
1 tsp. nutmeg or cinnamon
1/2 c. milk
juice of 1/2 lemon
Preparation

Sift flour and baking powder together.
Add shortening and beaten eggs to potatoes while still hot; add sugar, salt and nutmeg.
Beat thoroughly.
Add flour and milk alternately in small amounts, beating well after each.
Add lemon juice.
Pour into greased loaf pan and bake at 325\u00b0 for 1 hour.
Makes 1 (8 x 4-inch) cake.
