Spanish Tortilla - cooking recipe

Ingredients
    6 medium potatoes
    3 to 4 eggs
    1 medium onion (optional)
    salt
    pepper (black)
    vegetable oil
Preparation
    Peel and slice potatoes.
    Dice onion.
    Place into a deep frying pan with about 1/4 cup vegetable oil.
    Cover and cook on medium heat until well done.
    Beat eggs.
    Remove potatoes from oil and drain.
    Blend potatoes and eggs thoroughly, adding salt and pepper to taste.
    Drain excess oil from frying pan.
    Place ingredients in the frying pan and pat down smooth to approximately one-inch thick. (Resembles a cake.)
    Cook until golden brown.
    Place a plate upside down on the cake and with care, turn the cake onto the plate. Slide the cake back into the frying pan, uncooked side down.
    Cook until well done (golden brown).
    Cut as you would a pie.
    Serve hot or cold.
    Serve as is or with tomato ketchup.
