New England Clam Chowder - cooking recipe
Ingredients

1/4 lb. salt pork, diced
1 c. boiling water
1 tsp. salt
2 (8 oz.) cans clams, minced
1 c. light cream
1 large onion, finely chopped
3 medium potatoes, diced
1/4 tsp. pepper
2 c. milk
Preparation

Fry salt pork in skillet until brown and crisp; remove and drain.
Saute onions in remaining fat until golden brown and clear.
Add water, potatoes, salt and pepper.
Cover and simmer until potatoes are tender.
Add clams with liquid; heat.
Add milk and cream, season to taste.
Simmer until ready to serve.
Do not boil!
Serve in bowls topped with salt pork.
Serves 6.
