Rice And Red Kidney Beans - cooking recipe

Ingredients
    1 Tbsp. oil
    1 each: small onion and green pepper, chopped
    2 cloves garlic, minced
    1 (13 3/4 oz.) can reduced sodium chicken broth
    1 (15 oz.) can red kidney beans, rinsed and drained
    1 (8 oz.) can stewed tomatoes
    1/2 tsp. dried oregano leaves
    2 c. Minute instant whole grain brown rice (uncooked)
Preparation
    Heat oil in large skillet on medium-high heat.
    Add onion, pepper and garlic.
    Cook and stir until tender, but not browned. Stir in broth, beans, tomatoes and oregano; bring to boil.
    Stir in rice.
    Return to boil.
    Reduce heat to low.
    Cover and simmer for 5 minutes.
    Remove from heat and stir.
    Cover; let stand 5 minutes.
    Makes 4 low-fat servings.
