Lemon Cuke Molded Salad - cooking recipe

Ingredients
    1 pkg. diet lime Jell-O
    1/2 c. cold water
    1/2 c. hot water
    1/4 c. lime juice
    paprika
    1/2 c. grated carrot
    1 c. diced fine cucumber
    1 Tbsp. sugar substitute
    1/2 c. lo-cal mayonnaise
Preparation
    Soften Jell-O in 1/2 cup hot water; add sugar substitute.
    Add remaining ingredients except mayonnaise and cukes.
    Add mayonnaise and cukes after Jell-O begins to set.
    Place in mold and let set. Makes 4 servings.
    One serving has 55 calories.
