Shrimp Butter - cooking recipe
Ingredients

1 lb. raw shrimp
2 c. water
2 Tbsp. lemon juice or vinegar
1 stick soft butter
1/8 tsp. mace
salt and pepper
watercress (for garnish)
Preparation

Peel and devein shrimp.
Cook in acidulated water 5 minutes; drain and cool.
Finely chop shrimp, cream butter and beat in shrimp.
Add mace, salt and pepper to taste.
Put in mold and chill well.
Turn out, garnish plate and serve with crackers. Yield:
1 1/2 cups shrimp butter.
