Stir-Fry Eggs With Tomatoes(Brunch Treat) - cooking recipe

Ingredients
    4 eggs
    1 1/2 tsp. sherry
    1 tsp. salt
    3 Tbsp. peanut oil
    1 large tomato or 2 smaller ones, seeded and cut into bite size pieces
    1/4 tsp. sugar
    2 green onions, cut into 1-inch pieces
Preparation
    Beat eggs with sherry and 1/2 teaspoon salt; set aside.
    Heat 1 tablespoon oil in wok.
    Stir-fry tomatoes with sugar and 1/2 teaspoon salt for 2 minutes.
    Remove and set aside.
    Reheat wok with 2 tablespoons oil.
    Pour beaten eggs into wok and gently stir-fry until almost done.
    Add tomatoes and green onions and stir until set.
    Serve immediately.
