Porcupine Meatballs - cooking recipe
Ingredients

1 lb. ground beef
1 tsp. salt
1/2 c. uncooked rice
1/8 tsp. pepper
1 small onion, chopped
1/2 bell pepper (optional)
1 Tbsp. shortening
2 1/2 c. tomato juice or tomato sauce
dash of nutmeg
salt and pepper to taste
Preparation

Combine beef, rice, salt and pepper in a large bowl until well mixed.
Form into small balls about 1 1/2 inches in diameter. Place in a large baking dish.
Brown onion and pepper in shortening.
Add tomato juice (or sauce), nutmeg, salt and pepper to taste; pour over meat balls.
Cover dish with foil tightly and bake at 350\u00b0 for 1 hour.
