Funeral Pie - cooking recipe
Ingredients

2 c. seedless raisins
2 c. water
1/2 c. sugar
2 Tbsp. all-purpose flour
3 Tbsp. lemon juice
1/2 c. chopped nuts, optional
2 tsp. grated lemon peel, optional
pastry for 9 inch double-crust pie
Preparation

In a saucepan, bring raisins and water to a boil.
Reduce heat; simmer, uncovered for 5 minutes.
Combine sugar and flour; add to raisin mixture.
Cook and stir 1 minute longer.
Remove from the heat; stir in lemon juice, nuts and lemon peel if desired. Line a 9 inch pie plate with bottom pastry, trim edges even with plate.
Add filling.
Top with a lattice crust, or cover with top pastry and cut slits in top.
Bake at 425\u00b0 for 30-40 minutes or until filling is bubbly and crust is golden brown.
If necessary, cover edges with foil to prevent over browning.
Yield: 6-8 servings.
