Egg Plant Patties(Serves 4) - cooking recipe

Ingredients
    1 medium egg plant pared and cubed
    1 1/4 c. (5 oz.) shredded cheese (sharp)
    2 slightly beaten eggs
    1 Tbsp. chopped parsley
    2 Tbsp. chopped onions
    1 clone garlic, minced
    1/2 tsp. salt
    1/8 tsp. pepper
    2 Tbsp. cooking oil
Preparation
    In a covered sauce pan cook egg plant in boiling water until tender, about 5 minutes, drain and mash.
    Stir in crumbs, cheese, eggs, parsley, onion, garlic, salt and pepper.
    Shape into 8 patties, cook in hot oil 3 minutes on each side till golden brown.
