Mid-East Potato Salad - cooking recipe

Ingredients
    5-6 potatoes
    1 medium onion, chopped
    1-2 handfuls fresh parsley, cleaned & chopped
    1/3 c. lemon juice
    3/4 c. oil
    salt & pepper
Preparation
    Boil potatoes in skins until semi-soft and set aside to cool. When almost cool, remove skins, cut into chunks and place in large bowl.
    Add onion and parsley.
    Mix oil and lemon juice together and add to potatoes.
    Stir well to coat.
    Season with salt & pepper to taste.
    Refrigerate.
    Best when eaten the next day.
