Apple Walnut Muffins - cooking recipe

Ingredients
    2 c. all-purpose flour
    1 tsp. baking soda
    1/4 tsp. ground cinnamon
    1/4 tsp. ginger
    1/4 tsp. allspice
    1/4 tsp. nutmeg
    1/4 tsp. salt
    2 large eggs
    1 c. plus 2 Tbsp. apple juice
    2/3 c. buttermilk
    2 Tbsp. oatmeal
    2 small Granny Smith apples
    1/3 c. chopped walnuts
Preparation
    Preheat oven to 375\u00b0. Grease 12-cup muffin pan or line with paper liners. Mix together flour, baking soda, spices and salt. Mix separately the eggs, apple juice and buttermilk.
    Stir flour mixture and oatmeal in with egg mixture. Do not overmix. Gently stir in apples and nuts. Spoon batter into prepared pan, filling 2/3 full. Bake until lightly golden and tops spring back when pressed (about 25 minutes).
