Frozen Rainbow Delight - cooking recipe
Ingredients

1 pt. whipping cream
3 Tbsp. sugar
1 tsp. vanilla
1 c. nuts
16 coconut macaroons, crumbled
3 pt. sherbet or ice (various flavors)
Preparation

Whip cream; add sugar and vanilla.
Fold macaroon crumbs and nuts into whipped cream.
Spread half of mixture in a 9 x 13-inch pan.
Cover with alternate spoonfuls of sherbet so some of each color will be in each serving.
Top with remaining cream mixture. Freeze.
Cover with plastic.
May be made several days in advance. Serves 10 to 16.
