Polk Salad - cooking recipe

1/2 to 3/4 c. bacon grease
salt
Preparation

Wash polk salad through several waters and bring to rapid boil.
Boil for about 10 minutes.
Drain water and cover again with water and boil rapidly for 5 more minutes.
Drain water again.
Cover the third time with water and cook until tender and drain.
Put in skillet with bacon grease and salt to taste. Cook down until almost dry.
