Fried Eggplant - cooking recipe

Ingredients
    eggplant
    eggs
    cracker crumbs
    vegetable oil
    salt and pepper
    Parmesan cheese
Preparation
    Dip strips of eggplant in flour; then in beaten egg, then in cracker crumbs.
    Saute in small amount of oil for 5 to 10 minutes or until tender and golden brown.
    Or, French fry in hot oil (375\u00b0) for 2 to 4 minutes on each side.
    Season with salt and pepper.
    Sprinkle with Parmesan cheese before serving.
