Cary'S Famous Pancake - cooking recipe

Ingredients

1/2 c. flour
1/2 c. milk
2 eggs, lightly beaten
1/8 tsp. nutmeg
2 to 3 Tbsp. butter
2 Tbsp. confectioners sugar
juice of 1/2 lemon

Preparation

Preheat oven to 425\u00b0.
In mixing bowl, combine flour, milk, eggs and nutmeg.
Beat lightly.
Leave batter a little lumpy.
Melt butter in pie pan in oven; do not burn.
Pour in batter and bake 15 to 20 minutes, until golden brown.
Sprinkle with sugar and return briefly to oven.
Remove from oven and sprinkle with lemon juice. Serve with additional confectioners sugar and lemon available at the table.
Serves 2.
