Pork With Bay Leaves - cooking recipe
Ingredients

2 Tbsp. extra virgin olive oil
1 loin of pork, about 2 lb.
1 Tbsp. juniper berries, finely chopped
about 10 bay leaves
salt and freshly ground pepper
1 c. dry white wine
2 whole cloves
2 medium onions, chopped
Preparation

Heat the oil in a saucepan just large enough to hold the meat. Add pork and brown
over moderate heat for about 10 minutes.
Add juniper berries, cloves, bay leaves, onions, salt and pepper. Lower the heat and cook the meat until very tender, about 1 1/2 hours, adding 1/2 cup wine, a little at a time.
