Pelangoche Tacos - cooking recipe

Ingredients
    1 lb. beef or pork, sliced in strips
    3 slices bacon, diced
    4 slices ham, diced
    2 bell peppers, diced
    1 onion, sliced
    1/2 lb. Cheddar or Monterey cheese, grated
    flour tortillas
    season to taste
Preparation
    Fry bacon and meat until done.
    Add remainder of ingredients except cheese and simmer 10 minutes.
    Top with cheese until melted.
    Heat tortillas in dry pan.
    Fold ingredients in hot tortillas and eat (may want to add salsa).
    Serves 6 to 8 tacos.
