Potato Candy - cooking recipe

Ingredients
    2 small baked potatoes
    1 1/2 to 2 boxes confectioners sugar
    1 tsp. vanilla
    crunchy peanut butter
Preparation
    Peel potatoes and mash in large mixing bowl.
    Add sugar and vanilla gradually until mixture is of consistency of dough; roll out on waxed paper.
    Spread generously with peanut butter; roll into log.
    Chill for several hours or overnight.
    Slice; store in refrigerator.
    Rolls may be frozen.
