Potato Doughnuts - cooking recipe

Ingredients
    3 eggs
    1 1/3 c. sugar
    1 tsp. vanilla
    1 c. cool, mashed potatoes
    4 c. flour
    2 Tbsp. oil
    6 tsp. baking powder
    2 tsp. nutmeg
    1 tsp. salt
    1/2 c. milk
Preparation
    Beat eggs with sugar and vanilla until light.
    Add potatoes and oil.
    Sift dry ingredients.
    Add alternately with milk to potato mixture, beating well.
    Chill dough 3 hours.
    Fry in deep, hot fat (375\u00b0) for 1 minute on each side.
    Drain.
    Dip in sugar. Makes about 2 to 2 1/2 dozen.
