Pepper Relish - cooking recipe

Ingredients
    7 or 8 c. chopped mixed peppers
    2 Tbsp. pickling salt
    1 qt. vinegar
    2 c. sugar
Preparation
    Take peppers and put in pot.
    Add pickling salt, not iodized salt.
    Let sit for 2 hours.
    Add vinegar and 2 cups of salt.
    Stir and cook on the stove for 45 minutes to an hour.
    Get it thick but not dry.
    It is ready to refrigerate or preserve.
    Keep a cover on it to keep the heat in.
