Crawfish Jambalaya - cooking recipe

Ingredients
    3 lb. crawfish tails
    2 sticks butter
    2 Tbsp. flour
    6 onions, shredded
    chopped parsley
    chopped onion tops
    salt to taste
    black pepper to taste
    red pepper to taste
    3 c. cooked rice
Preparation
    Melt butter and add flour.
    Brown a little bit.
    Add onions and simmer until soft; add fat from crawfish.
    Simmer a few more minutes and then add tails, parsley, onion tops and seasonings. Cook 15 minutes.
    When ready to serve, add cooked rice.
