Mama'S Lemon Meringue Pie - cooking recipe
Ingredients

1 1/2 c. sugar
5 1/3 Tbsp. cornstarch
1 1/2 c. hot water
3 egg yolks, slightly beaten
3 Tbsp. butter
5 Tbsp. lemon juice
1 1/3 Tbsp. grated lemon rind
9-inch pie shell, baked
Preparation

Mix in saucepan the sugar and cornstarch.
Stir in gradually the hot water.
Cook over moderate heat, stirring constantly until mixture thickens and boils.
Boil 1 minute.
Beat a little of the hot mixture into egg yolks.
Beat into hot mixture in saucepan.
Boil 1 minute longer, stirring constantly.
Remove from heat.
Continue stirring until smooth.
Blend in butter, lemon juice and grated lemon rind.
Pour into pie shell and let cool. Top with meringue and brown at 350\u00b0.
