Ingredients

2 c. all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/4 c. polyunsaturated oil
1 3/4 c. skim milk
1 banana
Preparation

Sift flour, baking powder and salt together into mixing bowl. Cut banana into small cubes.
Pour oil and milk into bowl.
Stir until well mixed.
Add banana.
Mix.
Pour desired amount of mixture onto hot grill to form pancakes.
Turn over when bubble starts to form.
Makes 8 to 10 large pancakes.
Add more milk if thinner pancake is desired.
