Chili Pepper Quiche - cooking recipe
Ingredients

pastry for 9-inch pie
1 1/2 c. (12 oz.) shredded Monterey Jack cheese, divided
3 eggs
1 c. (8 oz.) shredded Cheddar cheese
1 (4 oz.) can chopped green chilies, drained
1 c. half and half (can substitute skim milk)
Preparation

Bake pastry shell for 3 minutes at 400\u00b0.
Prick with fork. Bake 5 minutes longer.
Cool.
Layer Cheddar cheese, 3/4 cup Monterey Jack cheese, chilies and remaining Monterey Jack cheese in shell.
Beat eggs until foamy.
Stir in half and half.
Pour mixture into pastry shell.
Bake at 350\u00b0 for 1 hour or until set.
