Cranberry Muffins - cooking recipe
Ingredients

1/4 c. shortening
1/4 c. sugar
1 tsp. grated orange rind
3 tsp. baking powder
1 c. finely chopped raw cranberries plus 2 Tbsp. sugar
1 c. milk
1 egg, beaten
2 c. flour
1/2 tsp. salt
Preparation

Cream shortening, sugar and egg together.
Sift flour, baking powder and salt together and add alternately with the milk, but with just enough strokes of the spoon to mix it.
Fold in cranberries and orange rind last.
Fill greased muffin pan 2/3 full.
Bake in hot oven (400\u00b0) for 25 minutes or until light brown.
