Ingredients

2 eggs
1 c. flour
1 Tbsp. sugar
dash of salt
water
Preparation

Combine all ingredients into mixing bowl.
Beat with mixer, adding water until runny thin.
In cast-iron skillet, add 1 teaspoon of oil.
Pour enough liquid to make a thin layer on bottom of skillet.
Cook until lightly brown on both sides.
Need oil for each addition.
Butter 1 side and pour on maple syrup. Roll up.
