Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    8 saltine crackers, crumbled and soaked in 3/4 c. milk
    3 Tbsp. butter
    1/2 tsp. salt
    1 egg, beaten
    1 1/4 c. grated Cheddar cheese
Preparation
    Peel, slice, boil and drain eggplant.
    Mix the remaining ingredients together, then add the boiled eggplant.
    Bake at 350\u00b0 for 1 hour.
