Zucchini Cheese Bake - cooking recipe

Ingredients
    1/2 c. chopped onions
    3 Tbsp. butter
    6 c. grated or chopped zucchini
    1 c. cooked rice
    1 c. shredded Cheddar or Swiss cheese
    1/2 c. chopped, fresh parsley (optional)
    1/2 tsp. salt
    1/4 tsp. pepper
    1 egg, beaten
    2 Tbsp. dry bread crumbs
    1 Tbsp. butter, melted
Preparation
    Heat oven to 375\u00b0.
    Grease 1 1/2-quart casserole.
    In a large skillet, saute onions in 3 tablespoons butter until tender.
    Add zucchini, cover and cook over low heat for 10 minutes.
    Drain and cool slightly.
    Add rice, cheese, parsley, salt, pepper and egg; mix well.
    Spoon into casserole.
    In a small bowl, combine crumbs and 1 tablespoon melted butter; sprinkle over top of casserole. Bake 30 minutes or until thoroughly heated.
