Blueberry Buttermilk Muffins - cooking recipe
Ingredients

2 eggs, beaten
1 c. buttermilk
1/2 c. butter or margarine, melted
2 1/2 c. flour
2 1/2 tsp. baking powder
1/4 tsp. salt
1 1/2 c. blueberries or a dry pack frozen blueberries
Preparation

In a small bowl, combine first 3 ingredients until blended. In a large bowl, combine all dry ingredients.
Make a well in the center. Add buttermilk mixture, stirring until flour mixture is just moistened. Fold in blueberries.
Spoon into greased muffin tins.
Bake at 400\u00b0 for 20 minutes or until tops are golden and muffins test done.
Remove from pan and cool on wire rack.
Makes 18 muffins.
