Lemon Oatmeal Crisps - cooking recipe

Ingredients
    1 c. butter or margarine
    1 c. sugar
    1 egg
    1 tsp. vanilla
    1/4 tsp. lemon extract
    1 2/3 c. sifted all-purpose flour
    1/4 tsp. salt
    1 c. Quaker oats (quick or old-fashioned; uncooked)
Preparation
    Beat together butter and sugar until creamy.
    Add egg, vanilla and lemon extract; beat well.
    Sift together flour and salt.
    Add to creamed mixture.
    Blend well.
    Beat in oats.
    Using 1 teaspoon measure, drop onto ungreased cookie sheets.
    Bake in preheated moderate oven (375\u00b0) for 7 to 10 minutes or until edges are lightly browned.
    Remove from cookie sheets while hot.
    Cool thoroughly before stacking.
    Makes 6 dozen.
