Chicken Parmigiana - cooking recipe
Ingredients

1 1/2 Tbsp. olive oil
3 Tbsp. chopped onion
3 (8 oz.) cans tomato sauce
1 1/2 tsp. chopped fresh basil or 1/2 tsp. dried
1/2 tsp. salt
1 c. flour
2 eggs, well beaten
1 c. milk
8 half chicken breasts, skinned, boned and slightly flattened
2 Tbsp. olive oil
8 slices Mozzarella cheese or 1/2 lb., grated
Preparation

Saute onion in oil until soft.
Add tomato sauce, basil and salt; simmer 5 minutes.
Set aside.
Mix flour, eggs and milk together; dip chicken pieces in mixture to coat.
Saute chicken in olive oil until golden.
Place chicken in a 9 x 13-inch pan.
Pour tomato sauce over.
Top with cheese.
Bake at 350\u00b0 for 20 minutes, or until chicken is done.
