Chicken Fried Rice - cooking recipe

Ingredients
    1 chicken, boiled and diced
    12 servings cooked rice
    10 green onions, diced
    5 large carrots, grated
    20 mushrooms, sliced
    1 can sliced water chestnuts, drained
    1 can sliced bamboo shoots, drained
    1 can bean sprouts, drained (optional)
    3 Tbsp. butter or margarine
    soy sauce to taste
Preparation
    In large skillet, melt butter and stir-fry onions and carrots until tender (not browned).
    Set aside.
    In small skillet, melt butter.
    Stir-fry mushrooms until tender.
    Let saute in butter while preparing remainder of ingredients.
    In large (6-quart or more) saucepan, stir together rice, chicken, water chestnuts, bamboo shoots and bean sprouts (if desired).
    Add soy sauce and stir until rice has a light brown color.
    Add remainder of ingredients (onions, carrots and mushrooms).
    Stir.
