Ava'S Potato Salad - cooking recipe

Ingredients
    1/3 c. olive or salad oil
    3 Tbsp. cider vinegar
    3 Tbsp. chopped parsley
    3 Tbsp. chopped green onion
    1/2 tsp. salt
    freshly ground pepper
    5 medium potatoes, cooked and sliced
    1 lb. fresh green beans, cooked
    2 c. slivered ham and/or chicken
    2 c. lettuce, spinach or salad greens
    1/2 c. thinly sliced radishes
Preparation
    Combine oil, vinegar, parsley, onion, salt and pepper.
    In a bowl (glass is beautiful) layer the warm potato slices (with skins on) and the dressing.
    Cover and let stand at room temperature, at least 30 minutes.
    Just before serving, add beans, ham, lettuce and radishes.
    Toss and serve.
