Madras Chicken - cooking recipe
Ingredients

1/2 c. chopped green pepper
1 garlic clove, minced
1 Tbsp. butter
1 (14 1/2 oz.) can whole tomatoes, drained
1/2 tsp. dried thyme leaves
1/2 lb. Velveeta cheese spread, cubed
1/2 c. chopped onion
1 to 2 tsp. curry powder
4 boneless chicken breasts (1-inch cubes)
1 tsp. lemon juice
1/8 tsp. black pepper
Preparation

Cook and stir bell pepper, onion, garlic and curry powder until vegetables are crisp and tender.
Add chicken; cook and stir 5 minutes or until chicken is no longer pink.
Stir in tomatoes, juice, thyme and black pepper.
Reduce heat to low; simmer 5 minutes.
Add Velveeta spread.
Stir until melted.
Serve over cooked rice, if desired.
Makes 4 servings.
