Cornmeal Griddle Cakes - cooking recipe
Ingredients

1 1/2 c. corn meal
3/4 c. flour
4 1/2 tsp. baking powder
1 tsp. salt
1/4 tsp. baking soda
2 Tbsp. sugar
1 egg
2 c. buttermilk
1/4 c. melted shortening
Preparation

Sift all dry ingredients.
Beat egg.
Add milk and pour all at once into dry ingredients.
Beat with rotary beater until smooth. Stir in melted shortening.
Bake on a very lightly greased, moderately hot griddle (300\u00b0 to 325\u00b0).
Bake until golden brown on under side and dry looking on top.
Then turn and bake until other side is brown.
Serve immediately with hot syrup.
Makes 24 (4-inch) cakes.
