Ingredients

1 lb. potatoes
1 1/2 c. flour
1/2 c. milk
1 1/2 tsp. salt
1/2 tsp. baking powder
4 Tbsp. vegetable oil
butter or margarine
Preparation

Pare and grate potatoes.
Mix in flour, milk, salt and baking powder.
Heat griddle or heavy skillet. Add 2 tablespoons oil. When oil bubbles, drop potato mixture into it by the tablespoon. Don't crowd.
Let cook over low heat until browned on both sides, turning only once. Spread with butter immediately and keep hot. Continue making pancakes, adding oil as needed.
