Carrot Corn Bread - cooking recipe
Ingredients

1 c. shredded raw carrot
1 c. yellow corn meal
1 c. milk
1 c. unsifted flour
2 1/2 tsp. baking powder
1 tsp. salt
2 eggs, slightly beaten
1 Tbsp. vegetable oil
Preparation

In medium bowl of electric mixer, combine carrots and corn meal; set aside.
In small saucepan, heat milk to boiling point. Add to corn meal mixture.
Stir thoroughly and bring to room temperature.
Meanwhile, in small bowl, combine flour, baking powder and salt; stir to mix thoroughly.
Add eggs and vegetable oil to corn meal mixture and beat on medium speed until combined. Add flour mixture and beat thoroughly.
Pour into lightly greased, 5 x 9-inch loaf pan.
Bake at 400\u00b0 for 30 minutes or until bread tests done.
