Homestead Vegetable Soup - cooking recipe

Ingredients
    1 sweet potato
    1 carrot
    1 turnip
    1 parsnip
    1 onion
    1 Tbsp. butter
    2 Tbsp. rice
    2 qt. cold water
    1 bay leaf
    sprig parsley (1 tsp. dry)
    1 celery root
    1 tsp. salt
Preparation
    Peel and dice all vegetables.
    Melt butter in 4-quart pot. Saute all vegetables except potato (white).
    Add rice, water and herbs.
    Boil 1 1/2 hours.
    Add white potato, boil for 15 minutes more.
    Adjust seasoning to taste.
    May add or change vegetables with what you have on hand.
